Chocolate-Swirled Meringues with Rosé Berries and Cream

Ingredients

For the Meringues:

  • 3 large egg whites, at room temperature
  • ¾ cup caster sugar (super fine sugar)

  • ¼ teaspoon salt
  • 3-4 ounces dark chocolate, melted

For the Rosé Strawberries and Whipped Cream:

  • 1½ cups strawberries, sliced lengthwise (remove leaves and stems)
  • 2 tablespoons sugar
  • ⅓ cup rosé wine
  • 1 cup heavy whipping cream

Instructions

  1. Prepare Strawberries: In a bowl, combine the sliced strawberries, sugar, and rosé. Let them macerate for about 30 minutes, allowing the flavors to meld.
  2. Preheat the Oven: Preheat your oven to 200°F (95°C). Line a muffin pan with muffin liners.
  3. Make the Meringue:
  • In a clean, dry mixing bowl, beat the egg whites with an electric mixer on medium speed until they become frothy.
  • Add the vinegar and salt, then gradually increase the speed to high.
  • Slowly add the caster sugar, about a teaspoon at a time, allowing each addition to dissolve completely before adding more. This should take about 10-15 minutes. The meringue is ready when it holds stiff peaks and feels smooth between your fingers.
  1. Add Chocolate Swirl: Gently fold in the melted chocolate, being careful not to overmix. You want to create a swirl effect.
  2. Scoop into Muffin Liners: Using two large spoons, scoop the meringue mixture into the muffin liners. Top each with a teaspoon of extra melted chocolate and swirl it gently with a toothpick.
  3. Bake: Place the muffin pan in the oven and bake for about 1.5 to 2 hours, or until the meringues are dry to the touch. Turn off the oven and let them cool inside for at least 2 hours.
  4. Whip the Cream: While the meringues cool, whip the heavy cream until soft peaks form. You can add a splash of the maceration juice for extra flavor.
  5. Assemble: Once the meringues have cooled, carefully remove them from the liners. Fill each with the rosé-soaked strawberries and top with whipped cream.
